Boiled and prepared dishes made with bamboo shoots grown in Kyoto are certified as "Kyoto canned goods." Although imports of bamboo shoots from overseas have increased in recent years, we are committed to using bamboo shoots grown in Kyoto. We deliver the thick, soft, and mildly bitter taste that only Kyoto bamboo shoots can offer, packed in cans while they are still fresh.

History

Cultivation of bamboo shoots for food began in earnest during the Edo period and became especially popular after the Meiji period. In Kyoto, they are primarily grown in the Nishiyama Hills, which span Nishikyo Ward, Muko City, Nagaokakyo City, and Oyamazaki Town in Kyoto City. Kyoto bamboo shoots are carefully managed throughout the year, with selection of parent bamboo in parallel with harvesting in the spring, weeding and fertilizing in the summer, and covering the area with straw and soil in the fall and winter. This results in bamboo shoots of such high quality that they are said to be "worthy of being eaten as sashimi." Our Kyoto Ginmi Hyakusen certified canned bamboo shoots are made from exceptionally fresh bamboo shoots dug that morning, cooked immediately after harvest, and quickly processed into cans. Simply open the can and enjoy the juicy, freshly picked flavor any time.

Brand Initiatives

The "Kyoto Canned Foods" brand is certified for boiled canned foods and prepared dishes made primarily from bamboo shoots grown in Kyoto Prefecture. The products must meet the standards set by the association and be cooked using ingredients grown in Kyoto Prefecture and traditional seasonings. The use of additives must be kept to a minimum, and the products must be produced in factories in Kyoto Prefecture under the supervision of experienced chefs with over 20 years of experience.

Kyoto Prefecture Canned Foods Cooperative

The association conducts joint purchasing of agricultural, forestry and fishery raw materials, primarily fresh bamboo shoots from Kyoto, as well as advertising and training for processed products. It also works to promote information exchange and mutual cooperation among members.
