"Kyoto Bread," born in Kyoto, a city of bread lovers that boasts one of the highest bread consumption rates in Japan, is a bread made with a "sake yeast flavored dough" made with sake yeast from Fushimi, baked by skilled Kyoto bakers, and made with the utmost care for Kyoto. Certified products include bean buns made with domestic red beans and matcha cream buns made with matcha produced in Uji.

History

Starting with Shinshindo, opened in 1913 by Tsuzuki Hitoshi, the first Japanese baker to train in France, many bakeries established in Kyoto throughout the Taisho and Showa periods, mastering authentic bread-making techniques. Bread became popular among merchants keen to try new things, as well as artisans and students looking for a quick meal despite their busy schedules. Combined with the popularity of coffee shop culture, bread became a fixture in Kyoto life before the war. Currently, national statistical surveys show that Kyoto consistently ranks among the top in Japan for bread expenditure and consumption, and it also boasts one of the highest numbers of bakeries in the nation. From established establishments with over 100 years of history to trending new shops, a wide variety of bakeries coexist, and the number continues to grow.

Brand Initiatives

Products certified as "Kyoto Bread" are required to use sake lees produced by a Kyoto brewery to create a fermented flavor that is characteristic of Kyoto, and other ingredients (such as red beans and matcha) must be domestically produced or produced in Kyoto Prefecture as much as possible.The manufacturing environment also requires a manufacturing and training system in place by bakers with many years of experience in Kyoto Prefecture, and facility management that meets hygiene standards.
