Training to improve vinegar brewing techniques
Joined and supported the Kyoto Cuisine and Sushi Industry Association, providing high-quality vinegar as an essential ingredient and promoting it to the general public.
Conducting market research (twice in recent years) to understand the business model and contribute to development activities
Member organizations: Kyoto Prefecture Food Industry Association, National Vinegar Association, Kinki Vinegar Association Federation. National Vinegar Fair Trade Council
As a member of the above industry, we strive to ensure proper and fair labeling of vinegar quality.
Overview
Each member business is a family business with a history in their respective region, and is also a "manufacturer" offering unique products. They are also unique in their management, and the market is flooded with products delivered directly to major companies. Our association is under pressure to strengthen its organization as a part of the traditional food culture of Kyoto cuisine and Kyoto sushi, in order to highlight the characteristics of Kyoto products, and to support the development of each individual company. The association also participated in the recent "Water Forum 2003."
