What is authentic Kyoto sozai? We want to produce authentic Kyoto sozai, and to achieve this, we believe it is important to learn about the history and traditions of Kyoto sozai and acquire the ability to learn from the past and take on new challenges. We have also studied and practiced many issues, including ingredients such as Kyoto vegetables, food hygiene, production techniques, and product development linked to the market.
