Our certified dishes include "Obanzai," "Dashimaki," and "Chirimen with Sansho Pepper," which are made with traditional cooking techniques that incorporate seasonal sensibilities. We use no preservatives or synthetic colorings and create dishes using the bounty of Kyoto's mountains, sea, and countryside with the traditions and techniques of Kyoto cuisine, offering a rich, nutritious flavor that is unique to Kyoto.
History
"Obanzai" is a Kyoto word that refers to traditional home-cooked Kyoto dishes. Written in kanji as "obansai," "ban" means something commonly used or a small gift, like bancha tea or banshasa. As the name suggests, it is a dish that Kyoto residents have eaten daily. Made with readily available seasonal vegetables and preserved foods, such as dried goods, and prepared using simple cooking methods like simmering, boiling, and tossing, it is characterized by a rich flavor that brings out the natural flavor of the ingredients. It has also been gaining attention in recent years for its eco-friendly aspects, such as the "spirit of disposal" of using up ingredients without waste, such as reusing over-soaked pickles in simmered dishes. Brand Initiatives
The "Kyoto Obanzai" brand certifies products that use ingredients harvested in areas within Kyoto's food culture (or within Japan if this is difficult). Products are also required to incorporate Kyoto specialties such as tofu and yuba, as well as traditional Kyoto ingredients such as kelp. Dashi stock is used for seasoning. The product must have a light yet rich flavor, and be produced in a factory within Kyoto Prefecture under the guidance of skilled craftsmen, based on traditional Kyoto cooking techniques.
