Yuba, made using only soybeans and water to concentrate the soy ingredients, has long been loved as an essential ingredient in Kyoto cuisine. Kyoto Ginmi Hyakusen's "Kyoto Yuba" is made using 100% domestically grown soybeans and is certified as "raw yuba" or "kumiage yuba," made using artisanal techniques. We deliver the delicious taste of yuba, allowing you to fully enjoy the natural flavor of soybeans.

History

Yuba was introduced to Japan during the Kamakura period as a Buddhist vegetarian dish, and is said to have first been made at Enryakuji Temple on Mount Hiei. In Kyoto, a city with many temples, there was a high demand for soy products as a protein source for the monks who could not eat meat or fish. Also, Kyoto's abundant high-quality groundwater made it ideal for producing yuba, which is made only from soybeans and water, so yuba production flourished. Later, vegetarian vegetarian dishes were served to worshippers at Zen temples, and yuba was also used in kaiseki cuisine at tea ceremonies, increasing the number of opportunities to eat it. By the Edo period, yuba had become a common ingredient in Kyoto cuisine. Today, despite being a plant-based ingredient, it is high in protein, low in calories, and rich in nutrients such as calcium, and is attracting attention as a health food.

Brand Initiatives

The "Kyoto Yuba" brand is certified for products made using only domestically grown soybeans (mainly whole soybeans), without any additives other than antifoaming agents, and by artisans with over 30 years of experience using traditional Kyoto yuba techniques. In addition to regular yuba, the certification also applies to processed foods that use yuba and foods that contain yuba as an ingredient at least 50%. Product packaging and labeling are also required to have the elegance of Kyoto.
