Notice of "Kyoto Food Business Platform Export Division Training Session" to be held on Thursday, November 20, 2025 *This session has now concluded.

The Kyoto Food Business Platform has established specialized committees for each theme to provide information and introduce case studies in order to promote specific initiatives such as creating new brand power and added value, and developing markets by building supply chains through collaboration between a variety of businesses, including farmers, forestry workers, fishermen, and food-related businesses. This time, the Export Committee will be holding a training session on the theme of exporting food products using plant-based technology. This training session will be useful not only for overseas exports, but also for developing products for inbound (domestic) tourism, such as halal, which is expected to continue to increase in the future. Please come and join us.

~Plant-based MIRA-Dashi® and its use in export foods~

When it comes to exporting food overseas, restrictions on animal-based ingredients are a major issue. MIRA-Dashi® is a technology that uses plant-based ingredients to express the flavors of animal-based foods such as chicken, beef, and bonito, making it useful for creating flavors for processed foods for export. We will introduce the technology with tastings and show examples of its use in products for export and souvenirs for overseas markets.


<Part 2> (15:00-16:00)

~ Workshop experience of "THE RAMENS," a new concept of ramen made with local ingredients ~

This workshop will feature a special version of "THE RAMENS," a tasting workshop also held at the Osaka-Kansai Expo. The concept behind THE RAMENS is that by combining a plant-based soup made with MIRA-Dashi® with local ingredients, any ingredients can be transformed into a local ramen. Through dialogue and tasting in each group, participants will have fun thinking about how to utilize Kyoto products. The content will also lead to souvenirs for foreign visitors to Japan and to promoting exports.
